- 2 cups all-purpose flour
- 1 teaspoon baking soda
- ¼ teaspoon salt
- ½ cup unsalted butter softened
- 1 cup brown sugar
- 2 large eggs beaten
- 4 ripe bananas mashed
- 1 teaspoon vanilla extract
Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
In a large bowl, whisk together the flour, baking soda, and salt.
In another bowl, cream the butter and brown sugar until smooth. Stir in the beaten eggs, mashed bananas, and vanilla extract until well blended.
Gradually add the dry ingredients to the banana mixture, stirring just until combined. Do not overmix.
Pour the batter into the prepared loaf pan. Bake in the preheated oven for 60 minutes, or until a toothpick inserted into the center comes out clean.
Let the bread cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
