  • ½ cup unsalted butter browned
  • 1 cup granulated sugar
  • 2 large eggs room temperature
  • 1 teaspoon vanilla extract
  • ½ cup milk room temperature
  • 1 ½ cups all-purpose flour sifted
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup mixed berries fresh or frozen

Instructions 

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. In a saucepan, melt the butter over medium heat until it turns golden brown and has a nutty aroma. Remove from heat and let it cool slightly.
  3. In a mixing bowl, whisk together the sugar and eggs until light and fluffy. Add the vanilla extract and milk, and mix well.
  4. Gradually add the flour, baking powder, and salt to the wet ingredients, mixing until just combined.
  5. Fold in the browned butter and mixed berries.
  6. Divide the batter evenly among the muffin tin cups.
  7. Bake for 20 minutes or until a toothpick inserted into the center comes out clean.
  8. Let the tea cakes cool in the tin for 10 minutes before transferring to a wire rack to cool completely.
