Ingredients

  • 4 cups Broccoli florets
  • 2 cups Cheddar cheese, shredded
  • 1 cup Heavy cream
  • 1 cup Chicken broth
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 2 tablespoons Butter
  • 2 tablespoons All-purpose flour
  • to taste Salt and pepper

Instructions 

  1. 1. In a large pot, melt the butter over medium heat. Add the chopped onion and garlic, and cook until softened.
  2. 2. Stir in the flour and cook for another minute, stirring constantly.
  3. 3. Gradually whisk in the chicken broth and heavy cream. Bring to a simmer.
  4. 4. Add the broccoli florets and cook until tender, about 10-15 minutes.
  5. 5. Use a blender to puree the soup until smooth. Return to the pot.
  6. 6. Stir in the shredded cheddar cheese until melted. Season with salt and pepper to taste.
  7. 7. Serve hot and enjoy!
