Ingredients

  • 2 large flour tortillas
  • 4 large eggs beaten
  • ½ cup shredded cheese cheddar or your choice
  • ¼ cup diced bell peppers
  • ¼ cup diced onions
  • 1 tablespoon butter
  • to taste salt and pepper

Instructions 

  1. 1. Heat a skillet over medium heat and melt the butter.
  2. 2. Add the diced bell peppers and onions. Cook until softened.
  3. 3. Pour in the beaten eggs, season with salt and pepper, and scramble until cooked through.
  4. 4. Remove the eggs and veggies from the skillet and set aside.
  5. 5. Place a tortilla in the skillet, sprinkle half of the cheese on one half of the tortilla, add half of the egg mixture, and fold the tortilla over.
  6. 6. Cook until the tortilla is golden brown and the cheese is melted, flipping once. Repeat with the second tortilla.
  7. 7. Cut into wedges and serve warm.
