Ingredients 

Main Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 stick unsalted butter cold and cubed
  • ½ cup cold water
  • 4 large eggs beaten
  • 1 cup shredded cheese
  • ½ lb breakfast sausage cooked and crumbled

Instructions 

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine flour and salt. Cut in the butter until the mixture resembles coarse crumbs. Gradually add cold water, mixing until the dough comes together. Wrap in plastic and refrigerate for 30 minutes.
  3. In a skillet, cook the breakfast sausage until browned and crumbled. Set aside.
  4. Roll out the dough on a floured surface and cut into circles. Place a spoonful of beaten eggs, sausage, and cheese on each circle. Fold over and seal the edges with a fork.
  5. Place empanadas on a baking sheet and bake for 20-25 minutes, until golden brown.
