Ingredients 

Main Ingredients

  • 1 cup Bran cereal
  • 1 cup Buttermilk
  • ½ cup Vegetable oil
  • 1 Egg
  • ½ cup Brown sugar
  • 1 cup All-purpose flour
  • 1 teaspoon Baking soda
  • ½ teaspoon Salt
  • ½ cup Raisins optional

Instructions 

  1. Preheat your oven to 375°F (190°C) and grease a muffin tin.
  2. In a large bowl, mix the bran cereal and buttermilk. Let it sit for 10 minutes.
  3. Add the vegetable oil, egg, and brown sugar to the bran mixture. Stir well.
  4. In another bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in the raisins if using.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
