  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 large eggs
  • 1 cup vegetable oil
  • 1 ½ cups sugar
  • 2 teaspoon vanilla extract
  • 2 cups grated zucchini
  • 1 cup fresh blueberries

Instructions 

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan.
  2. In a mixing bowl, combine flour, baking powder, baking soda, and salt.
  3. In another bowl, beat the eggs, then add oil, sugar, and vanilla. Mix well.
  4. Stir in the grated zucchini. Gradually add the dry ingredients to the wet mixture. Mix until just combined.
  5. Gently fold in the blueberries.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for about 60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the bread cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
