Main Ingredients
- 1 cup rolled oats
- 1 cup milk
- 1 cup all-purpose flour
- ½ cup sugar
- ½ cup vegetable oil
- 1 egg
- 1 tablespoon baking powder
- ½ teaspoon salt
- 1 cup fresh blueberries
Preheat oven to 400°F (200°C). Line a muffin tin with paper liners.
In a bowl, combine oats and milk. Let stand for 5 minutes.
In another bowl, mix flour, sugar, baking powder, and salt.
Add oil and egg to the oat mixture. Mix well.
Add the wet ingredients to the dry ingredients. Stir until just combined.
Gently fold in blueberries.
Divide batter evenly among muffin cups.
Bake for 20 minutes or until a toothpick comes out clean.
Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
