Ingredients

  • 2 cups all-purpose flour
  • ½ cup granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 tablespoon lemon zest
  • ½ cup unsalted butter, cold and cubed
  • 1 cup heavy cream
  • 1 cup blackberries

Instructions 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the flour, sugar, baking powder, salt, and lemon zest.
  3. Cut in the cold, cubed butter using a pastry cutter until the mixture resembles coarse crumbs.
  4. Gently fold in the heavy cream until just combined. Be careful not to overmix.
  5. Fold in the blackberries gently.
  6. Turn the dough out onto a floured surface and shape into a circle about 1 inch thick. Cut into 8 wedges and place on the prepared baking sheet.
  7. Bake for 20 minutes or until golden brown. Transfer to a cooling rack.
