Muffin Ingredients
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tablespoon poppy seeds
- 1 tablespoon baking powder
- ½ teaspoon salt
- 1 cup milk
- ½ cup vegetable oil
- 2 large eggs
- 1 tablespoon lemon zest
- 1 cup fresh blackberries
Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners.
In a large bowl, whisk together the flour, sugar, poppy seeds, baking powder, and salt.
In another bowl, mix the milk, vegetable oil, eggs, and lemon zest.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
Gently fold in the blackberries.
Divide the batter evenly among the muffin cups.
Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
