Main Ingredients
- 2 tablespoon Olive Oil
- 1 large Onion, chopped
- 3 cloves Garlic, minced
- 1 medium Bell Pepper, chopped
- 2 cans Black Beans, drained and rinsed
- 1 can Diced Tomatoes
- 2 tablespoon Chili Powder
- 1 teaspoon Cumin
- 1 teaspoon Paprika
- 1 cup Vegetable Broth
- to taste Salt and Pepper
Heat olive oil in a large pot over medium heat.
Add chopped onion and cook until translucent, about 5 minutes.
Add minced garlic and chopped bell pepper, cook for another 5 minutes.
Stir in black beans, diced tomatoes, chili powder, cumin, and paprika.
Pour in vegetable broth and bring to a simmer. Cook for 20 minutes, stirring occasionally.
Season with salt and pepper to taste. Serve hot.
