Ingredients 

Main Ingredients

  • 2 tablespoon Olive Oil
  • 1 large Onion, chopped
  • 3 cloves Garlic, minced
  • 1 medium Bell Pepper, chopped
  • 2 cans Black Beans, drained and rinsed
  • 1 can Diced Tomatoes
  • 2 tablespoon Chili Powder
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 cup Vegetable Broth
  • to taste Salt and Pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and cook until translucent, about 5 minutes.
  3. Add minced garlic and chopped bell pepper, cook for another 5 minutes.
  4. Stir in black beans, diced tomatoes, chili powder, cumin, and paprika.
  5. Pour in vegetable broth and bring to a simmer. Cook for 20 minutes, stirring occasionally.
  6. Season with salt and pepper to taste. Serve hot.
