Ingredients 

Crust

  • 1.5 cups all-purpose flour
  • 0.5 cup unsalted butter cold, cut into cubes
  • 0.25 cup sugar
  • 1 pinch salt
  • 1 large egg yolk

Filling

  • 1 cup heavy cream
  • 0.5 cup sugar
  • 1 teaspoon vanilla extract
  • 2 cups mixed berries fresh

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, sugar, and salt. Cut in butter until mixture resembles coarse crumbs. Add egg yolk and mix until dough forms.
  3. Press dough into a tart pan. Bake for 15 minutes or until golden brown. Let cool.
  4. In another bowl, whisk together heavy cream, sugar, and vanilla extract until stiff peaks form. Spread over cooled crust.
  5. Top with mixed berries. Chill in the refrigerator for at least 1 hour before serving.
