Ingredients 

Crust

  • 1.5 cups graham cracker crumbs
  • 0.25 cup sugar
  • 0.33 cup melted butter

Filling

  • 2 cups cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 4 eggs

Berry Swirl

  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 2 tablespoon sugar (for berries)

Instructions 

  1. Preheat oven to 325°F (163°C).
  2. Mix graham cracker crumbs, ¼ cup sugar, and melted butter. Press into the bottom of a 9-inch springform pan.
  3. Beat cream cheese, 1 cup sugar, and vanilla until smooth. Add eggs one at a time, mixing well after each.
  4. Pour half of the cream cheese mixture over the crust. Spoon half of the berry mixture over the cream cheese layer. Swirl with a knife.
  5. Pour the remaining cream cheese mixture over the berries. Spoon the remaining berries on top and swirl again.
  6. Bake for 1 hour. Turn off the oven and let the cheesecake cool in the oven with the door slightly open for 1 hour.
  7. Refrigerate for at least 4 hours before serving.
