Ingredients 

Main Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cup strawberries, sliced
  • 1 cup blueberries
  • ½ cup raspberries
  • ¼ cup chopped mint
  • ¼ cup sliced almonds
  • 2 tablespoon honey
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil

Instructions 

  1. Rinse quinoa under cold water.
  2. In a pot, bring water to a boil. Add quinoa, reduce heat, cover, and simmer for 15 minutes.
  3. Fluff quinoa with a fork and let it cool.
  4. In a large bowl, combine quinoa, strawberries, blueberries, raspberries, mint, and almonds.
  5. In a small bowl, whisk together honey, lemon juice, and olive oil.
  6. Pour dressing over the salad and toss to combine.
