Ingredients

  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 cup Greek yogurt
  • 2 cups mixed berries fresh or frozen
  • 2 tablespoon honey
  • 1 teaspoon vanilla extract

Instructions 

  1. 1. Rinse the quinoa under cold water.
  2. 2. In a saucepan, bring the water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed.
  3. 3. Remove from heat and let it cool.
  4. 4. In a mixing bowl, combine Greek yogurt, honey, and vanilla extract.
  5. 5. In serving glasses, layer quinoa, yogurt mixture, and berries. Repeat layers as desired.
  6. 6. Serve immediately or chill in the refrigerator before serving.
