Ingredients 

Crust

  • 1 ¼ cups all-purpose flour
  • ¼ cup cornmeal
  • ½ teaspoon salt
  • ½ cup unsalted butter, cold and cubed
  • cup buttermilk

Filling

  • 2 cups mixed berries (strawberries, blueberries, raspberries)
  • ¼ cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice
  • 1 egg, beaten (for egg wash)

Instructions 

  1. 1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. 2. In a bowl, mix flour, cornmeal, and salt. Add cold butter and mix until crumbly.
  3. 3. Gradually add buttermilk, mixing until dough forms. Shape into a disk, wrap in plastic, and chill for 30 minutes.
  4. 4. In another bowl, combine berries, sugar, cornstarch, and lemon juice.
  5. 5. Roll out dough on a floured surface. Transfer to baking sheet. Add berry mixture in the center, leaving a border.
  6. 6. Fold edges over the filling. Brush edges with beaten egg.
  7. 7. Bake for 45 minutes or until crust is golden. Cool before serving.
