Berry Galette Recipe (Buttermilk Cornmeal Crust)

Crust
- 1 ¼ cups all-purpose flour
- ¼ cup cornmeal
- ½ teaspoon salt
- ½ cup unsalted butter, cold and cubed
- ⅓ cup buttermilk
Filling
- 2 cups mixed berries (strawberries, blueberries, raspberries)
- ¼ cup granulated sugar
- 1 tablespoon cornstarch
- 1 teaspoon lemon juice
- 1 egg, beaten (for egg wash)
1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
2. In a bowl, mix flour, cornmeal, and salt. Add cold butter and mix until crumbly.
3. Gradually add buttermilk, mixing until dough forms. Shape into a disk, wrap in plastic, and chill for 30 minutes.
4. In another bowl, combine berries, sugar, cornstarch, and lemon juice.
5. Roll out dough on a floured surface. Transfer to baking sheet. Add berry mixture in the center, leaving a border.
6. Fold edges over the filling. Brush edges with beaten egg.
7. Bake for 45 minutes or until crust is golden. Cool before serving.
