Ingredients

  • 4 medium beets peeled and cut into wedges
  • 2 tablespoon olive oil
  • 1 cup goat cheese crumbled
  • 1 cup arugula fresh
  • ¼ cup walnuts toasted
  • 1 tablespoon balsamic vinegar
  • to taste salt
  • to taste black pepper freshly ground

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Toss beets with olive oil, salt, and pepper. Spread on a baking sheet.
  3. Roast beets for 30 minutes or until tender. Let cool.
  4. In a mixing bowl, combine roasted beets, goat cheese, arugula, and walnuts.
  5. Drizzle with balsamic vinegar and toss gently.
  6. Serve immediately.
