Instructions
Preheat oven to 400°F (200°C).
Toss beets with olive oil, salt, and pepper. Spread on a baking sheet.
Roast beets for 30 minutes or until tender. Let cool.
In a mixing bowl, combine roasted beets, goat cheese, arugula, and walnuts.
Drizzle with balsamic vinegar and toss gently.
Serve immediately.
