Ingredients 

Main Ingredients

  • 1 lb Beef stew meat cut into bite-sized pieces
  • 1 cup Barley
  • 1 Onion chopped
  • 2 cloves Garlic minced
  • 3 Carrots sliced
  • 2 Celery stalks sliced
  • 8 cups Beef broth
  • 1 teaspoon Dried thyme
  • 1 teaspoon Salt or to taste
  • ½ teaspoon Black pepper or to taste
  • 2 tablespoon Olive oil

Instructions 

  1. Heat olive oil in a large pot over medium heat. Add beef and cook until browned.
  2. Add onion and garlic, cook until softened.
  3. Add carrots and celery, cook for a few minutes.
  4. Pour in beef broth, add barley, thyme, salt, and pepper. Bring to a boil.
  5. Reduce heat and simmer for 1 hour, or until barley is tender. Adjust seasoning if needed.
