Ingredients 

Main Ingredients

  • 2 cups rolled oats
  • 0.5 cup chopped nuts (walnuts or pecans)
  • 1 teaspoon baking powder
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon salt
  • 2 ripe bananas, mashed
  • 1 cup milk (dairy or non-dairy)
  • 0.25 cup honey or maple syrup
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions 

  1. Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
  2. In a large bowl, mix oats, nuts, baking powder, cinnamon, and salt.
  3. In another bowl, combine mashed bananas, milk, honey, egg, and vanilla.
  4. Pour wet ingredients into dry ingredients and mix until combined.
  5. Divide the mixture evenly among the muffin cups.
  6. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  7. Let cool before serving.
