  • 3 medium beets peeled and thinly sliced
  • 1 tablespoon olive oil
  • 1 teaspoon sea salt

Instructions 

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Use a mandoline slicer to thinly slice the beets.
  3. In a bowl, toss the beet slices with olive oil and sea salt.
  4. Arrange the beet slices in a single layer on the prepared baking sheet.
  5. Bake for 15-20 minutes, or until the edges are crispy. Keep an eye on them to prevent burning.
  6. Remove from the oven and let them cool completely before serving.
