  • 1 cup Baby spinach chopped
  • 1 tablespoon Olive oil
  • 1 tablespoon Milk
  • to taste Salt
  • to taste Black pepper

Instructions 

  1. 1. In a mixing bowl, whisk together the eggs, milk, salt, and pepper.
  2. 2. Heat the olive oil in a non-stick skillet over medium heat.
  3. 3. Add the chopped baby spinach to the skillet and sauté for 1-2 minutes until wilted.
  4. 4. Pour the egg mixture over the spinach in the skillet.
  5. 5. Cook for 2-3 minutes, gently lifting the edges with a spatula to let uncooked egg flow underneath.
  6. 6. Once the eggs are set, fold the omelet in half and slide onto a plate. Serve immediately.
