Ingredients

  • 2 slices Bread whole grain or sourdough
  • 1 Avocado ripe
  • 2 Eggs large
  • 1 tablespoon Lemon Juice freshly squeezed
  • to taste Salt
  • to taste Black Pepper freshly ground
  • 1 tablespoon Olive Oil

Instructions 

  1. 1. Toast the bread slices until golden brown.
  2. 2. Halve the avocado, remove the pit, and scoop the flesh into a bowl. Mash with a fork and mix in the lemon juice, salt, and pepper.
  3. 3. Spread the mashed avocado evenly over the toasted bread slices.
  4. 4. Bring a saucepan of water to a gentle simmer. Crack each egg into a small bowl and gently slide into the simmering water. Poach for about 3-4 minutes, until the whites are set but the yolks are still runny.
  5. 5. Use a slotted spoon to remove the poached eggs from the water and place one on each slice of avocado toast.
  6. 6. Drizzle with olive oil and sprinkle with additional salt and pepper if desired. Serve immediately.
