Main Ingredients
- 2 slices Whole grain bread
- 1 Avocado ripe
- 1 Egg
- 1 tablespoon Olive oil
- to taste Salt and pepper
1. Toast the bread slices until golden brown.
2. While the bread is toasting, slice the avocado in half, remove the pit, and scoop out the flesh into a bowl. Mash the avocado with a fork and season with salt and pepper to taste.
3. Heat the olive oil in a small pan over medium heat. Crack the egg into the pan and cook until the white is set but the yolk is still runny, about 3-4 minutes.
4. Spread the mashed avocado evenly on each slice of toasted bread.
5. Place the cooked egg on top of one slice of the avocado-topped bread. Top with the other slice to make a sandwich.
6. Serve immediately and enjoy!
