- 8 large eggs
- ½ cup milk
- 1 bunch asparagus, trimmed and cut into 1-inch pieces
- 4 oz goat cheese, crumbled
- 1 tablespoon olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
Preheat your oven to 375°F (190°C).
In a mixing bowl, whisk together the eggs, milk, salt, and pepper.
Heat the olive oil in an oven-safe skillet over medium heat. Add the asparagus and cook until tender, about 5 minutes.
Pour the egg mixture over the asparagus in the skillet. Sprinkle the goat cheese evenly over the top.
Transfer the skillet to the preheated oven and bake until the frittata is set, about 15 minutes.
Let the frittata cool slightly before slicing and serving.
