  • 1 bunch asparagus, trimmed and cut into 1-inch pieces
  • 4 oz goat cheese, crumbled
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, whisk together the eggs, milk, salt, and pepper.
  3. Heat the olive oil in an oven-safe skillet over medium heat. Add the asparagus and cook until tender, about 5 minutes.
  4. Pour the egg mixture over the asparagus in the skillet. Sprinkle the goat cheese evenly over the top.
