Ingredients 

Pie Crust

  • 2 ½ cups all-purpose flour
  • 1 cup unsalted butter cold, cut into cubes
  • ¼ cup ice water

Filling

  • 6 cups fresh apricots pitted and sliced
  • 1 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon lemon juice freshly squeezed
  • 1 teaspoon vanilla extract

Instructions 

  1. 1. Preheat your oven to 375°F (190°C).
  2. 2. In a mixing bowl, combine flour and butter. Mix until it resembles coarse crumbs.
  3. 3. Gradually add ice water, mixing until dough comes together. Divide dough in half, wrap in plastic, and refrigerate for 30 minutes.
  4. 4. Roll out one half of the dough and fit it into a pie dish.
  5. 5. In another bowl, mix apricots, sugar, cornstarch, lemon juice, and vanilla extract. Pour into the pie crust.
  6. 6. Roll out the second half of the dough and place it over the filling. Seal and crimp the edges. Cut a few slits on top to allow steam to escape.
  7. 7. Bake for 45 minutes or until the crust is golden brown and the filling is bubbly. Let it cool before serving.
