  • 1 cup dried apricots, chopped
  • 1 cup mixed nuts, chopped
  • 1 cup rolled oats
  • ½ cup honey
  • ¼ cup butter, melted
  • ¼ cup brown sugar
  • ½ teaspoon vanilla extract
  • ¼ teaspoon salt

Instructions 

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the oats, nuts, and dried apricots.
  3. In a small saucepan, combine honey, butter, brown sugar, vanilla extract, and salt. Heat until the mixture is smooth.
  4. Pour the honey mixture over the oat mixture and stir until well combined.
  5. Press the mixture into a greased 9x9 inch baking pan.
  6. Bake for 20-25 minutes or until golden brown.
  7. Let it cool completely before cutting into bars.
