  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 2 cups all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 4 oz cream cheese softened
  • ¼ cup apricot preserves

Instructions 

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the butter and sugar until light and fluffy. Add the vanilla extract and egg, and mix until combined.
  3. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  4. Roll the dough into 1-inch balls and place them on the prepared baking sheet. Use your thumb to make an indentation in the center of each ball.
  5. In a small bowl, mix the softened cream cheese until smooth. Spoon a small amount of cream cheese into each indentation, then top with a small dollop of apricot preserves.
  6. Bake for 12-15 minutes, or until the edges are lightly golden. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
