Apple Jam Pie in a Jar

- 2 cups Apples, peeled and chopped
- 1 cup Sugar
- 1 tablespoon Lemon juice
- 1 teaspoon Cinnamon
- 1 cup All-purpose flour
- ½ cup Butter, cold and diced
- ¼ cup Ice water
1. Preheat the oven to 375°F (190°C).
2. In a saucepan, combine apples, sugar, lemon juice, and cinnamon. Cook over medium heat until apples are soft and mixture thickens, about 15 minutes. Let cool.
3. In a mixing bowl, combine flour and butter. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs. Add ice water, a tablespoon at a time, until the dough comes together.
4. Roll out the dough and cut into circles to fit the jars. Place a layer of dough at the bottom of each jar.
5. Spoon the apple mixture into the jars, filling them about three-quarters full. Top with another layer of dough.
6. Place the jars on a baking sheet and bake for 20-25 minutes, or until the crust is golden brown.
7. Let cool before serving.
