- 2 cups Old-fashioned oats
- 1 teaspoon Baking powder
- 1.5 teaspoon Ground cinnamon
- 0.5 teaspoon Salt
- 2 Eggs large
- 1 cup Milk any kind
- 0.25 cup Maple syrup
- 1 teaspoon Vanilla extract
- 2 cups Diced apples peeled and cored
Preheat your oven to 350°F (175°C). Grease a muffin tin or line with muffin liners.
In a large mixing bowl, combine the oats, baking powder, cinnamon, and salt.
In another bowl, whisk together the eggs, milk, maple syrup, and vanilla extract.
Pour the wet ingredients into the dry ingredients and mix until well combined. Fold in the diced apples.
Divide the mixture evenly among the muffin cups.
Bake for 25-30 minutes or until the tops are golden and a toothpick inserted into the center comes out clean.
Let the oatmeal cups cool in the pan for a few minutes before transferring to a wire rack to cool completely.
