  • 4 Apples peeled, cored, and chopped
  • 4 stalks Celery chopped
  • 1 Onion chopped
  • 2 cloves Garlic minced
  • 4 cups Vegetable Broth
  • 1 tablespoon Olive Oil
  • to taste Salt and Pepper

Instructions 

  1. 1. Heat olive oil in a pot over medium heat.
  2. 2. Add chopped onion and garlic, sauté until translucent.
  3. 3. Add chopped apples and celery, cook for 5 minutes.
  4. 4. Pour in vegetable broth, bring to a boil, then simmer for 20 minutes.
  5. 5. Blend the soup until smooth. Season with salt and pepper to taste.
  6. 6. Serve hot.
