Ingredients

  • 1 cup cake flour
  • 1 ½ cups granulated sugar
  • 12 large egg whites
  • 1 ½ teaspoons cream of tartar
  • ¼ teaspoon salt
  • 1 ½ teaspoons vanilla extract
  • ½ teaspoon almond extract

Instructions 

  1. Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. Sift together cake flour and ¾ cup of the sugar. Set aside.
  3. In a large bowl, beat egg whites until foamy. Add cream of tartar and salt, and continue to beat until soft peaks form.
  4. Gradually add the remaining ¾ cup sugar, beating until stiff peaks form.
  5. Gently fold in the flour mixture, vanilla extract, and almond extract until just combined.
  6. Spoon the batter into the cupcake liners, filling each about ¾ full.
  7. Bake for 18 minutes or until the tops are lightly golden and a toothpick inserted into the center comes out clean.
  8. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
