  • 2 ¼ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • ¾ cup granulated sugar
  • ¾ cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups Andes mint chocolate chunks

Instructions 

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In another bowl, beat the butter, granulated sugar, and brown sugar until creamy. Add the eggs and vanilla extract, and beat until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in the Andes mint chocolate chunks.
  5. Drop rounded tablespoons of dough onto the prepared baking sheet. Bake for 10-12 minutes, or until the edges are lightly browned.
  6. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a cooling rack to cool completely.
