Almond Madeleines Recipe

- ½ cup all-purpose flour
- ½ cup ground almonds
- ½ cup sugar
- ½ cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
Preheat your oven to 375°F (190°C). Grease and flour a madeleine pan.
In a mixing bowl, whisk together the flour, ground almonds, and salt.
In another bowl, beat the eggs and sugar until pale and thick. Add the vanilla extract.
Gently fold the dry ingredients into the egg mixture. Then fold in the melted butter.
Spoon the batter into the prepared madeleine pan, filling each mold about ¾ full.
Bake for 10-12 minutes, or until the edges are golden brown and the centers spring back when touched.
Remove from the oven and let cool in the pan for a few minutes before transferring to a wire rack to cool completely.
