Almond Joy Macaroons
Delicious coconut macaroons with almonds and chocolate, reminiscent of Almond Joy candy bars.

- 3 cups sweetened shredded coconut
- ⅔ cup sweetened condensed milk
- 1 teaspoon vanilla extract
- 24 whole almonds toasted
- 1 cup semi-sweet chocolate chips melted
Preheat oven to 325°F (163°C). Line a baking sheet with parchment paper.
In a mixing bowl, combine shredded coconut, sweetened condensed milk, and vanilla extract. Mix well.
Using a spoon, scoop out small mounds of the mixture and place them on the prepared baking sheet. Flatten slightly and press an almond into the center of each mound.
Bake for 20 minutes, or until the edges are golden brown. Remove from oven and let cool completely.
Once cooled, dip the bottoms of the macaroons in melted chocolate and place them back on the parchment paper to set.
