Today’s handwritten recipe card is another pulled from my vintage recipe box. While I haven’t made these myself, these holiday cookies sound like a variation on a sweet, coconut macaroon. The addition of corn flakes likely adds an extra bit of texture and crunch to the Christmas cookie.
Kris Kringle Cookies Recipe
aka Corn Flake Macaroon
1 egg white, beaten stiff
1/2 cup sugar
1/3 cup shredded coconut
1/2 cup walnuts, chopped fine
3/4 cup corn flakes
1/2 teaspoon vanilla
When the egg white is half beaten, start adding the sugar as you continue to beat the egg white. When all the sugar is beaten in and stiff, then add all the other ingredients in order given.
Drop by spoonfuls on greased baking sheet. Bake in a slow oven.
Note: I would suggest baking at 325F (160C) for 15-20 minutes.
